Can you freeze Eggplant?

I was wondoring, can I freeze raw, sliced eggplant? I freeze zucchini that way. I love Mousaka but its way to hot to cook in the summer when eggplant is fresh and in season.

yes just make sure to remove as much air as possible and make sure you do not stack or place anything on top of it until it is frozen because it can bruise and become mealy when you thaw it out.

    i dont see why not, but too long of freezing will spoil the eggplant

    you can freeze anything if you put it in bowl of water then put bowl of water with what you wanted to freeze in it in the freezer

    Yes you can freeze eggplant, cook the eggplant so it will
    not be soggy.

    If you want to puree it first, it would be fine. But once you freeze eggplant, it just won’t have the same flavor/texture that it did before you froze it.
