Bakin’ with Beth: Zucchini Carrot Bread

1-1/2 c. shredded zucchini (2 medium)
1-1/2 c. shredded carrots (3 medium)
1-1/2 c. sugar
2/3 c. vegetable oil
4 eggs
1-1/2 c. all purpose flour
1-1/2 c. whole wheat flour
2 tsp. baking soda
1-1/2 tsp. ground cinnamon
1 tsp. salt
3/4 tsp ground cloves
Heat oven to 350F. Grease bottoms only of 2 (8×4 inch) loaf pans or 1 (9×5) loaf pan with shortening or cooking spray.
In large bowl, mix zucchini, carrots, sugar, oil and eggs with a wire whisk. Stir in remaining bread ingredients. Divide batter evenly between pans.
Bake 8 inch loaves 1hr 15min or 9 inch loaf 1hr 15 minutes to 1hr 30 min or until toothpick inserted in center comes out clean. Cool 10 minutes in pans on cooling rack.
Loosen sides of loves from pans; remove from pans and place top sides up on cooling rack. Cool completely, 1 hr.

SPREAD:
1 pkg (8 oz) cream cheese, softened
1/4 c. honey
2 tsp. grated orange or lemon peel
In small bowl, beat spread ingredients with electric mixer on medium speed until smooth and fluffy. Serve with sliced bread. Cover; referigerate any remaining spread. Wrap loaves tightly and store at room temperature up to four days, or refrigerate up to 10 days.
Per slice: Calories 220; total fat 11 gm; sodium 250 mg.

    it’s the whole wheat flour. it’s less tasty, dry and in dough, it’s less elastic. i find i need to add cinnamon whenever im baking with whole wheat, but it’s healthy :)

    Very nice! *pretends to be Borat* Cool…would you happen to know if the flour has gluten in it? I have to watch that stuff right now for dietary reasons. But I want to try it out so bad. I may have to wait a while before I’m able though.

    All breads normally convert over to sugar. The dietary info doesn’t give the sugar amounts, but the exchanges are: 1 starch, 1 other carbohydrate, 2 fat.
    Carbohydrate choices: 2.
    No clue what that means.

    I’ve made zucchini …
    I’ve made zucchini muffins and they were good. I used regular old all purpose rather than the wholewheat yeah cuz I’m a rebel like that. When I made them no one even knew there was any zucchine in it. Your bread looked yummy as usual. We need a Silverscreamgrl cookbook out in stores. :)

    Thanks Daryl, well…..I’m sitting here having a chunk for breakfast. And it turned out dense & moist. Exactly the way I like it! :) Oh, and I realized that I forgot to put the salt in after I went to bed, it didn’t effect anything.

    Hey Beth, I made this and it was so yummy. I left out the sugar and salt and added walnuts. It was delicious. It can be eaten savoury or sweet depending on what you put on it!
