In large bowl, mix zucchini, carrots, sugar, oil and eggs with a wire whisk. Stir in remaining bread ingredients. Divide batter evenly between pans.<br />
Bake 8 inch loaves 1hr 15min or 9 inch loaf 1hr 15 minutes to 1hr 30 min or until toothpick inserted in center comes out clean. Cool 10 minutes in pans on cooling rack.<br />
Loosen sides of loves from pans; remove from pans and place top sides up on cooling rack. Cool completely, 1 hr. </p>
<p>SPREAD:<br />
1 pkg (8 oz) cream cheese, softened<br />
1/4 c. honey<br />
2 tsp. grated orange or lemon peel<br />
In small bowl, beat spread ingredients with electric mixer on medium speed until smooth and fluffy. Serve with sliced bread. Cover; referigerate any remaining spread. Wrap loaves tightly and store at room temperature up to four days, or refrigerate up to 10 days.<br />
Per slice: Calories 220; total fat 11 gm; sodium 250 mg.</p>

<p>Ingredients:</p>
<p>2 small to medium fresh zucchini squash, washed, dried, and cut into ½-inch slices<br />
2 small to medium fresh yellow summer squash, washed, dried, and cut into ½-inch slices<br />
salt and pepper, to taste<br />
1 tablespoon butter or margarine, melted<br />
1 teaspoon sugar</p>
<p>In a medium-sized skillet, melt 1 tablespoon butter or margarine.  Add zucchini and yellow summer squash slices.  Sprinkle with salt and pepper to taste.  Sprinkle with 1 teaspoon sugar.  Saute over low heat, until squash is translucent, but not mushy, about 7 or 8 minutes.  Remove from pan to a tray covered with paper toweling to absorb any excess butter or margarine.  Serve in a clear bowl to show off the contrasting green and yellow colors of the squash.  This is a beautiful side dish that is healthy and super easy to make!  And, it is subtly sweet and tasty!!!</p>

<p>Ingredients:</p>
<p>1 cup self-rising flour<br />
1 egg, well beaten<br />

<p>In a large mixing bowl, combine 1 cup self-rising flour, 1 well-beaten egg, 1 cup milk, and 1/4 cup vegetable oil.  Stir completely, or blend with an electric mixer.  Have your zucchini rounds prepared for cooking.  Heat 2 inches of oil in an electric deep fryer or a pot on the stove to somewhere between 345 degrees  and 375 degrees.  With tongs, dip pepper pieces in batter, allowing excess batter to drip into bowl, and then transfer to hot oil.  You may fry several rounds at the same time.  Fry until golden brown on both sides, and then remove with tongs or other utensil and place on paper toweling to drain.  When all pieces are fried and removed, pat the upper side to remove any further excess oil.  Now, place the Battered Deep-Fried Zucchini Rounds on a nice serving dish, and serve with Surfin&#8217; Seafood tail Sauce or ketchup.  Terrific!!!</p>

<p>You&#8217;ll need:<br />
2lbs zucchini, yellow squash, patty pan, whatever you want or can find<br />
1 red pepper, chopped into 1&#8243; squares<br />
1 tbsp coriander powder<br />
1 tsp in<br />
1 tsp dried mango powder (amchur)<br />
1 tbsp minced ginger<br />
2 medium tomatoes, chopped<br />
Seasoned salt (to taste)</p>
<p>1) Top and tail the squash.  If you&#8217;re using zucchini, slice into 1&#8243; rounds.  If you&#8217;re using patty-pans, cut a cross into one end of the squash, cutting about a 1/4 of the way through.</p>
<p>2) Warm a little olive oil in a wok over high heat.  Add squash &amp; pepper.  Stir occasionally, and cook, uncovered, until some brown spots appear all over.</p>
<p>3) Turn heat down to medium-high.  Sprinkle spice powders, ginger and salt all over the veggies.  Stir.  Cover and cook 2 minutes.</p>
<p>4) Add tomatoes.  Stir and cook, covered another 2 minutes until squash is crisp-tender.</p>
<p>5) Sprinkle with chopped cilantro.  Taste for seasoning and serve!</p>
