she sliced into a segment and up the other side, removing a perfect orange slice ?

Within seconds, she had removed the skin expertly, in one long piece, and then cut into the orange. With one swoop, she sliced into a segment and up the other side, removing a perfect orange slice and leaving behind only the membrane from both sides. In less than a minute, she had repeated this feat until all that was left in her hand was a complete "empty" orange — only membranes and core.

Q. "membrane" means skin, here?
Q. Could anybody give an easy explantion of this movement: "With one swoop, she sliced into a segment and up the other side, removing a perfect orange slice and leaving behind only the membrane from both sides"?

He explained it really good on this website. It showed it well. It’s youtube so it’ll work. It looks fairly easy. Good luck!

And membrane is the little veiny white parts between each wedge. This site is even more insightful but it doesn’t show them. It gives pictures but doesn’t show you what they did to take the peel off.

It’s called supreming don’t know why. the membrane is the part between the slices. You slice off the top and bottom of the orange then remove the peel and pith(the white part) then simply slice into the orange next to a membrane to the center and back up next to the membrane on the other side of the slice keep going until the whole orange is used.
