Pudding or cake with orange slices?
November 29th, 2009 | by admin |My husband is talking about that cake his mother used to bake when he was a child. But he doesn’t remember exactly what it is!
All I know is first you line the mold with orange slices and pour the mixture over, so when you turn it on a plate the slices are at the top.
It is cut into slices and served(so must be something like a cake)
Any idea?
Mandarin Orange Pineapple Cake
* 1 (11 oz.) can of mandarin oranges (drain and save the juice)
In a bowl, mix together:
* 1 box Duncan Hines butter cake mix. (or equivalent)
* 1 stick softened margarine
* 1/2 of the saved orange juice
* 1/4 cup oil
* 4 eggs
After mixing together the above ingredients add the drained oranges to mixture.
Grease and flour 3 nine-inch cake pans. Divide cake mixture evenly in cake pans. Bake at 325° for 30-35 min.
Set on wire cake racks for 15 minutes. Remove from pans and cool completely.
Frosting:
* 1 (20 oz.) can crushed pineapple (un-drained)
* 1/2 cup powdered sugar
* 1 (6 oz.) box vanilla instant pudding mix
* 1 (12 oz.) Cool Whip (or equivalent whipped dessert topping)
* 1 cup finely shredded coconut
In a large bowl mix, sugar, vanilla instant pudding mix and pineapple (un-drained). Let it stand for 5 minutes to thicken. Add cool whip and coconut; blend mixture together.
Spread frosting between layers, around edge of cake and the top of cake.

Suzy, it similar to a pineapple upside down cake, just when you peel the oranges, make sure you get all the white part off as well, exposing just the orange, cut into your required slices and line your baking tin, make sure your grease it well. once you have lined it with orange slices or segments, add your cake batter, Bake at the required setting.

Honey-Orange Upside Down Cake
http://img4.sunset.com/i/2003/09/orange-cake-m.jpg
Ingredients
1/2 cup honey
1/4 cup orange juice
1 unpeeled orange (10 oz.), rinsed and very thinly sliced crosswise (about 1/8 in. thick; discard ends)
3/4 cup (3/8 lb.) butter, at room temperature
1 cup sugar
2 large eggs
1 tablespoon grated orange peel
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup whole milk
Preparation
1. In a 9- to 10-inch nonstick, ovenproof frying pan (with sloping sides) over medium-high heat, stir honey and orange juice until boiling. Cook without stirring until mixture is foamy, slightly thickened, and reaches 230° (carefully tilt pan so mixture is deep enough to register on thermometer), 2 to 4 minutes. Chill until thickened, about 15 minutes. Slightly overlap orange slices in concentric circles over syrup.
