If I freeze apple slices in an ice ring, will they turn brown in the freezer?
December 30th, 2009 | by admin |I’m making a holiday punch & want to make a fruit ice ring for it. Will thin, flat, round apple slices turn brown if I freeze them in the ice ring? I just want to make sure when I put it in the punch bowl it doesn’t look brown & gross.
I would use peaches and raspberries and green grapes for your ice ring. They are more colorful and freeze very well without browning. Apples are so iffy. Even if you put lemon juice on them, frozen apples just taste watered down.

The browning process occurs when the fruit is exposed to the air for a period of time. The covering of the apples in water should stop the oxidizing. I always fill lthe ice ring 1/2 way and freeze it. Only when it is frozen do I slice the fruit and put it on the bottom layer and then pour more liquid on top. I routinely use pineapple and apple juice so it doesn’t water down the punch as it melts. Put in some maraschino cherries for color. Look and see if your market has carambola or star apples. They are even prettier.To be sure the apples don’t oxidize rub them with a cut lemon.

Try dipping them in a little lemon juice before freezing. The juice stops fruit from oxidizing and should keep the color nicely. It won’t affect the flavor at all. Besides, a little lemon sounds great in a punch. I’ve heard that grapes freeze better though.
