 I found a wonderful metal melon-baller (plastic ones buckle with the firm apple flesh) that works as a great apple corer -- simple and fast! I then lay each &quot;cheek&quot; on its flat side and slice straight down like an onion. If my apples are larger, I give it a slice or two crosswise, too. (Imagine a &quot;C&quot; shaped section of apple sliced into three).

I don&#039;t know if you&#039;ve heard of it, but cheese makes a great addition to apple pie.

For a wonderful topping, mix flour, sugar, butter and a combination of grated (not the powdered store-bought kind) parmesan cheese and cheddar cheese. Mix until crumbly.

Here&#039;s a sample mixture: 
1/2 cup shredded Cheddar cheese
1/4 cup shredded Parmesan cheese
1/2 cup flour 
1/3 cup sugar 
1/3 cup butter or margarine 

For a different spin on it, try one with cheese in the crust:
